The 15-minute dinner is a promise most sites break. These eight we’ve made on nights when the alternative was takeout. They use pantry staples, one pan where possible, and none require knife skills you don’t have.

2. Soy-garlic noodles (12 min)#
- 200g noodles, 2 tbsp soy, 1 tbsp honey, 1 tsp sesame oil, scallions
- Boil noodles. Whisk soy, honey, sesame. Toss. Top with scallions and a fried egg if you have one.
3. Chickpea skillet (13 min)#
- 2 cans chickpeas, 1 can tomatoes, cumin, spinach
- Sizzle cumin in oil, add tomatoes and chickpeas, simmer 8 min, wilt spinach. Done.
4. Smashed tacos (15 min)#
- Tortillas, ground beef or turkey, cheese, toppings
- Brown meat, spoon onto tortillas with cheese, pan-crisp 2 min. Top with whatever’s cold in the fridge.
5. Lemon pepper salmon (14 min)#
- Salmon, lemon, pepper, butter
- Pan-sear salmon skin-side 4 min, flip 3 min, butter and lemon at the end.
6. Fried rice rescue (12 min)#
- Day-old rice, egg, frozen veg, soy
- Egg scramble, add veg, add rice and soy, crisp 3 min. Uses up leftovers.
7. Caprese toast (10 min)#
- Bread, tomato, mozzarella, basil, olive oil
- Toast, layer, drizzle. Not a full meal? Add an egg.
8. Sausage and peppers (15 min)#
- Sausages, bell peppers, onion
- Slice and pan-cook together 12 min. Fancier than it looks.
