"Healthy Lunch Ideas: 10 Make-Ahead Lunches That Survive the Fridge"
The office lunch is where healthy eating goes to die — usually as a soggy salad. These ten hold up for three to four days and taste better than the deli downstairs. Built for prep Sunday, eat all week.
The jar method#
Layer dressing at the bottom, sturdy veg next, grains/protein middle, greens on top. Shake at lunch. Greens never touch dressing until you eat.
1. Mediterranean jar#
Bottom: lemon-olive oil. Then cucumber, chickpeas, tomato, quinoa, spinach. Shake.
2. Chicken burrito bowl#
Salsa bottom, rice, black beans, corn, chicken, cheese. Microwave or eat cold.
3. Soba noodle jar#
Sesame-soy bottom, shredded cabbage, edamame, soba, scallions. Cold and great.
4. Hummus veg wrap#
Hummus, grated carrot, spinach, roasted pepper in a tortilla. Wrap tight, halve.
5. Lentil salad#
Cooked lentils, cherry tomato, cucumber, feta, lemon. Holds four days easily.
