Vegetarian weeknights don’t need substitutes that try to taste like meat. They need beans, eggs, cheese, and bold veg. These ten are fast, filling, and cheap — the rotation we actually cook.

1. Shakshuka (20 min)#

Simmer peppers, onion, garlic, canned tomatoes with cumin. Crack in eggs, cover 8 min. Scoop with bread.

2. Chickpea curry (22 min)#

Onion, garlic, curry paste, chickpeas, coconut milk. Serve over rice. Makes lunch too.

3. Caprese orzo (18 min)#

Orzo in stock 10 min, stir in pesto, spinach, mozzarella. One pot.

4. Black bean tacos (15 min)#

Refried beans, cheese, quick-pickled onion, avocado. Broil to melt.

5. Egg fried rice (12 min)#

Day-old rice, egg, frozen peas, soy. The leftover rescue.

6–10#

  • Pesto pasta — any veg, jarred pesto, parmesan
  • Stuffed sweet potato — bake, fill with beans + feta
  • Halloumi salad — sear halloumi, toss with tomatoes and cucumber
  • Veggie frittata — leftover veg, eggs, oven 20 min
  • White bean stew — cannellini, kale, tomato, garlic bread

FAQ#

Will I be hungry? Not if you include beans, eggs, or cheese for protein and a grain for staying power. These are built to satisfy.

Is this healthy? Mostly yes — veg-forward, olive oil, legumes. Treat cheese as a flavor, not the base.

Can I meal-prep? Curries, stews, and grain bowls reheat best. Eggs dishes are fresh-only.

Verdict#

Vegetarian nights are faster and cheaper than meat nights when you lean on beans and eggs. Shakshuka and chickpea curry are the keepers.
